The World Grits Festival presents its annual Quaker Instant Grits Roll ST. GEORGE, S.C. (April 3, 2007) Grits. You can eat em or you can roll in em. Or you can do both at the 22nd annual World Grits Festival presented by Quaker Instant Grits. April 13 through 15, folks from far and wide traveled to St. George, South Carolina to experience the versatility of grits at the 2007 World Grits Festival. The festival, which Quaker Instant Grits has been a lead sponsor of for the last 19 years, includes food, arts, crafts and live music not to mention the world famous Quaker Instant Grits Roll. Competitors prepare all year for a mere 10 seconds to roll in a baby pool filled with Quaker Instant Grits. Contestants weigh in before and after their roll and the one with the most grits adhering to them wins. The “Roll” is a unique event and a tradition that requires contestants to employ true strategy for using their bodies and clothing to accumulate the most grits. This year, the kids’ roll will kicked off the contest at 1 p.m. on Saturday, April 14, and the adult roll began at 1 p.m. on Sunday, April 15. The winner of each roll received a cash prize and commemorative Quaker Instant Grits towel. Throughout the weekend, festival visitors registered to win Quaker Instant Grits T-shirts, receive free Quaker Instant Grits samples and taste some favorite family flavors. Chef Fio is known for his innovative and scrumptious recipes and his shrimp & grits recipe is no exception. Now everyone can taste his delectable shrimp & grits recipe for themselves at home. The Green Valley Spas Shrimp and Grits – Recipe Created by Executive Chef Fio Antognini, Green Valley Spa & Resort ? cup Quaker Instant Grits 3 cups water cup roasted red bell pepper, diced 1 teaspoon curry powder Dash of sea salt 1 Tablespoon olive oil 2 Tablespoons chopped onion cup sliced mushrooms lb. (8 oz.) raw, peeled and de-veined shrimp cup white wine 1? teaspoons Dijon mustard 2 Tablespoons fat-free sour cream 1 teaspoon low-sodium soy sauce 1 to 2 teaspoons hot sauce (your favorite brand: mild, medium or hot) Chopped parsley for garnish Prepare Quaker Instant Grits according to package directions. Add curry and bell peppers; stir well over low heat for 1 minute to allow flavors to meld. Cover and keep warm. In a large saut? pan, heat olive oil. Add onions and cook for 2 minutes over medium-high heat stirring occasionally. Add mushrooms, stir to combine, and cook for 3 minutes. Add shrimp, stir to combine, and cook for 2 minutes. In a bowl, mix the white wine, mustard, sour cream, soy sauce and hot sauce. Pour mixture into pan while stirring with shrimp and vegetables. Simmer uncovered for 2 minutes. To serve, ladle an even amount of grits onto four dinner plates, creating a large, thin circle of grits on each. Spoon the shrimp mixture onto the center of grits. Garnish each plate with a sprinkling of chopped parsley, and serve. Yields 4 servings.
