ABOUT LOUISA SHAFIA
Louisa Shafia is the author of The New Persian Kitchen, winner of Food52’s Piglet award for best cookbook of the year. Louisa has cooked at notable restaurants in San Francisco and New York, and holds Persian food dinners as a guest chef at restaurants around the country. New York Magazine called her long-running Iranian street food pop-up, Lakh Lakh, “a Persian-tapas gateway into the ancient cuisine,” and she was honored to be on the food panel at last year’s inaugural Harvard Iranian Summit. Her recipes have been featured in The New York Times, The Wall Street Journal, The New Yorker, Bon Appétit, and on National Public Radio. Louisa currently lives in Nashville, TN where she has been cooking Persian dinners in her home to benefit the Tennessee Immigrant and Refugee Rights Coalition (TIRRC), and is organizing a series of events this fall that feature the food and stories of chefs from Nashville’s diverse immigrant community.
The New Persian Kitchen
A luscious, contemporary take on a time-honored cuisine, The New Persian Kitchen makes the exotic and beautiful tradition of seasonal Persian cooking both accessible and inspiring. In The New Persian Kitchen, acclaimed chef Louisa Shafia explores her Iranian heritage by reimagining classic Persian recipes from a fresh, vegetable-focused perspective. These vibrant recipes demystify Persian ingredients like rose petals, dried limes, tamarind, and sumac, while offering surprising preparations for familiar foods such as beets, carrots, mint, and yogurt for the busy, health-conscious cook. The nearly eighty recipes—such as Turmeric Chicken with Sumac and Lime, Pomegranate Soup, and ice cream sandwiches made with Saffron Frozen Yogurt and Cardamom Pizzelles—range from starters to stews to sweets, and employ streamlined kitchen techniques and smart preparation tips.
Lucid Food: Cooking for an Eco-Conscious Life
With organic and seasonal cooking principles becoming ingrained in today’s kitchens, and new buzzwords including locavore and CSA steadily gaining traction, how do we integrate food politics into daily life in ways that are convenient, affordable, and delicious? Lucid Food offers more than eighty-five healthy, eco-oriented recipes based on conscientious yet practical environmental ideals. Sustainable chef and caterer Louisa Shafia demystifies contemporary food issues for the home cook and presents simple, seasonal dishes that follow nature’s cycles, such as Baby Artichokes with Fresh Chervil, Apricot Shortcake with Lavender Whipped Cream, and Roasted Tomato and Goat Cheese Soup. Her empowering advice includes how to source animal products ethically and responsibly, support local food growers, and reduce one’s carbon footprint through urban gardening, preserving, composting, and more. This cookbook celebrates the pleasures of savoring home-prepared meals that are healthful, honest, pure, additive-free, and transparently made, from the source to the table.
